Take of cold soft water, 9 gallons,

red currants, 10 do. Ferment.

Mix, raw sugar, 1O lbs.

beet-root, sliced, 2 lbs.

red tartar, in fine powder, 2 oz.

Put in bitter almonds, 1 oz.

ginger, in powder, 2 oz.

then add brandy, 1 quart.

This will make 18 gallons.
